- 1 Apple
- ½ mild yellow onion
- 2 Tbsps apple cider vinegar
- 2 Tbsps sunflower oil
- salt
- peppers
- 1 pinch sugar
- 200 grams lamb's lettuce
- 80 grams Hazelnuts
- 80 grams smoked Bacon

Preparation steps

Squeeze half of the lemon. Rinse the apple and cut into quarters, cut out the core and cut the flesh into thin columns. Drizzle with lemon juice. Finely grate the onion. Whisk with the vinegar, lemon juice and oil. Season with salt, pepper and sugar.

Rinse the lettuce thoroughly and spin dry.

Toast hazelnut in a nonstick skillet, until fragrant. Remove to cool, then chop coarsely. Dice the bacon into small pieces and crisp in the hot pan. Add the lettuce with apples on plates, drizzle with the dressing and sprinkle with the nuts and bacon and serve. Serve with a fresh whole wheat baguette.
