- For the macaroons
- 4 egg whites
- 2 tsps lemon juice
- 1 ⅛ cups sugar
- 1 ¾ cups Almond flour
- Food coloring (if desired)
- 1 tsp Cocoa
- 2 Tbsps Shredded coconut
- For the filling
- ⅔ cup Dark chocolate (or milk chocolate)
- 2 Tbsps cream
- ¾ oz butter (chopped)
- Food coloring (if desired)
- To decorate
- powdered sugar (in different colours)
- writing icing (orange and blue)
- Chocolate frosting
- Sugar ball
- wooden Skewer
Preparation steps
1.
Heat the oven to the lowest setting and line a baking tray with greaseproof paper.

Beat the egg white and the lemon juice until stiff peaks form. Gradually add the sugar and continue beating until the mixture is shiny and can be cut with a knife. Carefully stir in the almonds.

Separate the mixture into various bowls and colour it with cocoa and food colouring. Add some coconut to the white mixture.

Fill the different mixtures into piping bags. Squeeze small semi-circular rounds onto the baking tray and brush flat with a moist brush. Bake for approx. 40 minutes leaving the oven door open a crack.

To make the cream filling melt the chocolate in a bain marie. Add the cream and the butter and stir in using a whisk. If using light chocolate add some food colouring if desired. Leave the mixture to cool.
6.
Spread half the macaroons with the various fillings and place the sticks in the middle and the remaining macaroons on top. Decorate as you wish.
