2 kilograms Asparagus
50 grams Whipped cream
150 grams butter
2 egg yolks
1 bunch Tarragon
1 Tbsp lemon juice

Preparation steps

Rinse asparagus, snap off woody ends and peel. Simmer asparagus in salted water, about 20 minutes. Remove and drain well. To make sauce: Melt butter. Whip cream until stiff. In a bowl placed over a pan of hot water, beat egg yolks with lemon juice. Season with salt and pepper and continue beating until eggs are creamy.

Remove eggs from heat. Slowly whisk in butter until incorporated. Fold in cream. Set two sprigs of tarragon aside for garnish and finely chop the rest. Fold chopped tarragon into the sauce. Serve asparagus with sauce and garnish with tarragon sprigs.
