4 Tbsps balsamic vinegar
salt

7 ozs Asparagus
18 ozs salmon fillets (in one piece, without skin)
3 Tbsps olive oil
4 ozs Strawberries
½ bunch Radish
½ red onion

Preparation steps

Sort the arugula and spinach, wash and spin dry. Mix vinegar, salt, honey, pepper, chili flakes and oil to a dressing. Clean asparagus, wash, peel lower third, remove woody ends, divide asparagus into bite-sized pieces. Rinse salmon fillet, pat dry, and cut into 8 oblong pieces, salt, and pepper.

Heat 2 tablespoons of oil in a frying pan. Fry asparagus for approx. 4 minutes over medium heat, then remove. Heat remaining oil and fry salmon pieces in it on both sides for 4-5 minutes each.

Meanwhile, clean and wash strawberries and radishes. Cut strawberries into slices, thinly slice radishes. Peel onion and cut into strips. Mix arugula, spinach, onions and radishes with asparagus and spread on plates. Sprinkle with strawberries, drizzle with dressing and top asparagus salad with salmon.
