- 10 stalks white Asparagus (about 500 grams; alternatively green asparagus)
- 3 ozs Ham sausage (5 thin slices)
- 3 ozs Pastry flour (type 1050)
- ¾ cup
- 1 egg
- salt
- 3 tsps Canola oil

Preparation steps
Rinse asparagus thoroughly, peel completely and cut off the tough ends.
Wrap each of 2 asparagus spears with 1 slice of ham sausage. Place in a steamer basket set over a pot of simmering water and steam for about 15 minutes.
Meanwhile, whisk together flour and milk in a bowl until smooth. Separate egg and mix yolk into the batter. Season lightly with salt.
Beat egg white until stiff and fold into the batter.
Heat the oil in a non-stick skillet. Pour in batter and bake until golden underneath, then flip and cook until the other side is golden. Tear pancake into strips with 2 spatulas. Serve with the asparagus rolls.
