- 500 grams green Asparagus
- 1 small red Bell pepper
- 2 big red onions
- salt
- freshly ground peppers
- 1 Tbsp Sesame seeds
- cold pressed olive oil
- apple cider vinegar

Preparation steps

Peel onions and cut into thick slices. Mix the onions with 1/4 teaspoon salt and 2 tablespoons of vinegar and let sit for 10 minutes.

Rinse asparagus, trim woody ends, cut into slices and blanch in boiling salted water until tender. Drain and let cool. Rinse bell peppers, halve, remove seeds and ribs and cut into narrow strips. Combine asparagus, peppers, onions (with marinade), sesame seeds and 4 tablespoons olive oil. Season with salt and pepper. Serve immediately with fresh crusty white bread if desired.
