- 1 Red chili pepper
- 2 centimeters ginger
- 1 garlic clove
- 300 grams Spinach
- 4 shiitake or Oyster mushrooms
- 300 grams Chicken breasts
- 200 Chinese Egg noodle
- 1 Tbsp vegetable oil
- 800 milliliters Chicken broth (or Dashi)
- 2 Tbsps soy sauce
- 2 Tbsps Lime juice
- 1 pinch Szechuan pepper (crushed)

Preparation steps
1.
Rinse and halve chile, remove seeds and ribs and cut into thin strips. Peel and finely chop ginger and garlic. Rinse spinach, shake dry and remove any tough stems. Wipe mushrooms clean with a paper towel and cut into slices. Rinse chicken, pat dry and cut into thin slices.

Cook noodles according to package instructions. Drain.

In a pan, sauté chile, ginger and garlic briefly in hot oil. Add chicken and sauté, stirring. Add broth, spinach and mushrooms and simmer 2-3 minutes. Season with soy sauce, lime juice and Szechuan pepper. Stir noodles into the soup and divide among bowls.
