- 400 milliliters Whipped cream (at least 30% fat content)

Preparation steps

Using a ration of 1:2 rice to water, simmer rice in salted water.

Rinse chicken, pat dry and cut into cubes. Thread 3 pieces of chicken onto each wooden skewer and season with salt and pepper. Cook chicken skewers on a hot grill pan with 2 tablespoons oil, 5-7 minutes per side. Meanwhile, peel and finely chop onion and garlic. Add peanuts to a food processor and grind coarsely. In a pan, heat remaining oil and sauté onion and garlic until translucent, 1-2 minutes. Add peanuts, peanut butter and cream. Simmer 5-10 minutes over medium heat. Season with salt and pepper. On warmed plates, serve chicken skewers with peanut sauce and cooked rice. Serve with chips and coleslaw if desired.
