- 400 grams carrots
- 250 grams potatoes
- 2 tsps freshly grated ginger
- 300 grams dried Apricot
- 1 bunch scallions
- 1 red chili pepper
- juiced lemons
- 1 Tbsp instant powdered Vegetable broth
- 2 tsps Curry
- ¼ tsp cinnamon
- 100 grams Crème fraiche

Preparation steps

Peel, rinse and chop carrots and potatoes. Cut apricots into small cubes. Rinse chile pepper, halve and remove seeds. Rinse and dry scallions, cut into thin rings. Heat oil in a saucepan and saute carrots, potatoes, apricots, chile pepper and scallions. Deglaze pan with 700 ml (approximately 3 cups) of water and lemon juice. Add broth and simmer for about 20 minutes..

Puree soup and season with curry powder and cinnamon. Pour into bowls and top with dollops of creme fraiche. Serve.
