- 200 grams Arugula
- ¾ l Vegetable broth
- 250 grams Double cream
- 8 shrimp
- 2 Tbsps butter
- 1 bunch White icicle radish
- salt
- peppers

Preparation steps

Trim stems from the arugula, rinse leaves and finely chop. Bring broth to a boil and stir in cream with a whisk. Simmer for 20 minutes, then puree with the arugula in a blender. Pour mixture back into the pot.

Rinse shrimp, pat dry and fry quickly in butter while turning. Peel radishes, rinse, cut into small spikes and fry briefly with the shrimp. Season soup to taste with salt and pepper, reheat, divide among bowls and top with shrimp and radishes.
