½ bunch parsley
1 handful Arugula
100 grams Tofu
1 Tbsp lemon juice
1 tsp Linseed
salt
freshly ground pepper

Preparation steps

1.

Chop nuts coarsely and toast in a dry pan. Rinse parsley and arugula and spin dry. Pluck leaves from stems and chop coarsely.

2.

Cut tofu into small cubes and puree tofu, parsley, arugula, lemon juice and linseed oil in a blender and season with salt and pepper. Pour puree into a glass bowl and spread until smooth. To serve, garnish with toasted nuts and parsley
