2 Tbsps Cider vinegar
3 Tbsps Walnut oil

Preparation steps

1.

Peel beets, cut into thin strips and transfer to a bowl. Mix together vinegar, oil and salt to taste. Pour mixture over beets and marinate 20 minutes. Rinse arugula, dry well and divide among plates. Top with beets.

2.

Dredge trout fillets in 1 tablespoon sesame seeds. Place fillets on salad. In a nonstick pan, toast remaining sesame seeds. Sprinkle on salad.
