- 400 grams Apricot
- 100 grams Strawberries
- 1 pc ginger
- Orange juice (per 100 ml)
- Apricot juice (per 100 ml)
- 1 Lime (Juice and zest)
- 3 Tbsps Maple syrup
- Lemon balm

Preparation steps
1.
In a pot of boiling water, blanch the apricots for about 20 seconds, Drain, peel, halve, pit and cut into thin wedges.
2.
Rinse, hull and chop strawberries.
3.
Peel and finely chop the ginger. Set 16 apricot wedges aside and puree the remaining apricots with the ginger, orange, apricot, lime juice and zest. Sweeten with maple syrup. Spoon into bowls, add the strawberries and reserved apricot wedges and garnish with lemon balm.
