For the apricots, you can do without soaking and instead of orange juice, puree 2-3 fresh, very ripe apricots. This will make the apricot aroma even more intense.

- 1 Organic orange
- 5 ozs dried Apricot
- 2 ozs almonds
- 1 ½ Tbsps honey
- thin slices Whole Wheat Bread
- seasonal Fruit (for garnish)

Preparation steps
Rinse orange with hot water and wipe dry. Finely grate zest to equal 1 teaspoon.
Juice orange and combine in a bowl with the zest.
Chop apricots and add to orange juice mixture. Cover and let stand for 8-10 hours (or preferably overnight).
In a mini chopper, combine almonds, honey, and apricots with soaking liquid; puree until smooth. Transfer to a clean jar approximately 12 ounces.
Spread each bread slice with 2 tablespoons apricot spread (refrigerate the rest in a covered jar). Garnish with apple slices or little apple balls (use a melon baller to form) and serve.
