Apple Trifle

- 4 Apple
- 2 Tbsps honey
- 4 Tbsps Calvados
- 1 Vanilla bean
- 4 ozs Amaretti cookies
- 12 ozs Sour cream
- 2 ozs sugar
- 1 pinch cinnamon
- 1 pinch Cardamom
- 2 ½ ozs Whipped cream
Squeeze the juice from half a lemon. Peel the apples, quarter, core and cut into cubes. In a covered pot, bring the apples to a boil with the honey, Calvados, vanilla bean (slit down the center) and lemon juice. Remove from the heat and allow to cool. Remove the vanilla pod.
While the apples cool, crumble the Amaretto cookies coarsley.
Stir the sour cream with sugar, cinnamon and cardamom until smooth. Whip the cream until stiff and fold into the sour cream.
Fill 4 glasses with the cookies, spiced cream and apple cubes in layers. Refrigerate for about 30 minutes, then serve.

If you can't find whole wheat oat cookies and still want to make the trifle treat, use crunchy oat flakes and chopped walnuts. The oat flakes get more flavour if they are briefly roasted in a pan.
