1 pinch salt
50 grams sugar
125 grams butter
1 egg

1 organic lemon
5 sour Apple

3 Tbsps Thyme honey
50 grams butter

Preparation steps

1.

For the dough: Measure flour onto work surface and make a well in the center. Sprinkle salt and sugar and add butter in pieces around the flour. In the well, add the egg and knead all ingredients into a smooth shortcrust. If necessary, add some more flour or cold water. Cover in plastic wrap and chill about 30 minutes.

For covering: Squeeze lemon juice. Rinse apples, peel, quarter and remove seeds and cut into thin columns. Mix with lemon juice.

Preheat oven to 180°C (approximately 350°F). Grease tart tin with butter.

Shape dough and roll out into a square and place into tart tin, pulling to the edge. Spread apple slices fan-like on crust. Trickle honey over apples. Distribute knobs of butter on top and bake until golden brown for about 50 minutes in the oven. Sprinkle thyme over apples during the past 5 minutes. Remove from oven and serve.
