500 grams Pear
2 organic Limes
1 kilogram jam sugar (1:1 ratio)
3 sprigs Tarragon

Preparation steps

Peel and quarter the apples and pears. Remove the seeds and finely dice. Mix the fruit with the sugar, and the juice of 1 lime. Let rest overnight.

Rinse the second lime in hot water, then finely grate the zest. Squeeze the juice from the lime. Coarsely chop the tarragon. Add to the pear and apple mixture, and bring to a boil. Simmer for 4 minutes, stirring occasionally. Divide into the prepared jars, and seal tightly. Turn upside down for 10 minutes, then turn right side up and cool completely.
