Peel apple and carrot and grate finely on the vegetable grater. Mix with walnuts and season with salt and pepper.

Place lettuce leaves on 2 slices of bread, top with the apple-carrot-mixture and stack the bread slices. Top with the remaining bread slice. Press down slightly and cut sandwich in half diagonally.
