- 1 ½ centimeters fresh ginger
- 3 Tbsps sugar
- 80 milliliters dry white wine
- 100 milliliters Whipped cream (at least 30% fat content)
- 2 Tbsps powdered sugar

Preparation
1.
Peel, quarter and remove cores from pears and apples. Slice fruit and mix with lemon juice. Peel and coarsely chop ginger. In a pan, cook sugar until caramelized. Add pears, apples and ginger. Deglaze with wine and simmer over medium heat about 5 minutes. Remove from heat and let cool.

Beat cream with powdered sugar until stiff. Fit a pastry bag with a star tip and fill with cream. Divide compote among bowls, top decoratively with cream and garnish with candied lemon peel, lemon zest and mint leaves.
