Preparation steps

Whisk egg yolks with sugar in a bowl over hot water bath.

Add Marsala and whisk well.

Whisk mixture for about 10 minutes or until thick, fluffy and has doubled in size (internal temperature shulf be 70-75°C) (approximately 160-165°F).
