Dough
250 grams Pastry flour
2 teaspoons Baking powder
½ teaspoon baking soda
1 packet Vanilla sugar
1 pinch salt
1 organic lemon (juiced and zested)
125 grams softened butter
200 grams sugar
3 eggs
200 grams Natural yogurt
40 grams raisins
1 Muffin tin (12-cup)

Preparation steps

1.

Combine the flour, baking powder, baking soda, vanilla sugar, lemon zest and salt in a mixing bowl.

Beat the softened butter and sugar until creamy then stir in the lemon juice, eggs and yogurt. Stir into the flour mixture and stir until just combined. Fold in the raisins.

Grease the muffin pan with butter.

Fill the muffin pan with batter and bake in a preheated oven (180°C) (approximately 350°F) for about 25 minutes. Let the muffins cool in the pan for about 5 minutes then carefully remove from the pan and let cool completely.
