60 grams brown sugar
1 pinch cinnamon
300 grams Yogurt (0.1% fat)
100 grams Quark
100 milliliters Whipped cream

Preparation steps

Rinse and peel rhubarb, cut into 1 cm (approximately 1/2 inch) wide pieces. Combine 100 ml (approximately 2/5 cup) of water with half of sugar and bring to a boil. Add rhubarb pieces and cook, covered, for about 5-6 minutes or until tender. Drain and let cool.

Combine remaining sugar with cinnamon. Combine yogurt and cottage cheese with half of cinnamon sugar, mix until smooth. Beat heavy cream until stiff and fold into yogurt mixture. Layer yogurt and rhubarb into glasses, dust with remaining cinnamon sugar and serve.
