500 grams fine Pastry flour
500 grams powdered sugar
4 eggs
Lemon peel
1 generous pinch Ammonium carbonate
cornstarch
Anise seed

Preparation steps

Beat the eggs and sugar until fluffy. Mix in the sifted flour and ammonium carbonate. Knead well. Cover the dough and let rest for 1 hour. Roll the dough about 8-10 mm (approximately 1/4 to 1/2 inch) thick and sprinkle with cornstarch.

Place the dough into the springform pan. Press on the dough, then use a knife to puncture it in several places. Let dry overnight in a warm place. Spread the anise seed on a greased sheet and add the cake on top of it. Bake at 160°C (approximately 320°F) about 20-30 minutes until it becomes a pale yellow cake.
