250 milliliters lukewarm milk
500 grams Pastry flour
20 grams sugar

1 pinch salt
75 grams melted butter

Preparation steps

Dissolve the yeast in the milk. Sift the flour into a bowl and make a well in the center. Place the milk in the center and knead into a dough with the sugar, eggs, salt, and about 50 grams of butter. Knead into a soft, pliable dough. Form the dough into 12 small balls and brush with melted butter. Let rest for about 10 minutes.

With greased hands, pick up each donut and stretch so that the middle is almost see through. Fry in the hot clarified butter at 170°C (approximately 350°F). Fry one or two at a time. Fry until golden brown, turning gently so that no grease gets into the middle and the center stays thin. Drain well and roll in the sugar.

Serve while warm.
