Ingredients

200 grams Wheat starch
boiling water
For the filling
125 grams chopped shrimp
1 generous pinch freshly grated ginger
1 Tbsp sesame oil
freshly ground peppers
1 Tbsp onions (or leeks, finely chopped)
salt
For the sauce
6 Tbsps soy sauce
4 Tbsps Wine vinegar

Preparation steps

Form a smooth dough from the wheat starch and water. Roll out thinly and cut out circles about 8 -10 cm (approximately 3-4 inches) in diameter. For the filling, mix shrimp, ginger, sesame oil, pepper, and onion (or leek) together and season with salt. Place the filling in the center of the circles. Fold in half and seal well, making decorative folds. Heat a little water in a wok, place the wontons in a steaming basket and steam, covered over medium heat for about 10 minutes.

For the sauce, mix all ingredients. Serve the wontons hot, with dipping sauce in small bowls alongside.
