4 pcs Wild salmon (each 3-4 ounces)
1 Cucumber
1 shallot
¾ oz Horseradish
1 tsp butter
2 ozs Crème fraiche
3 Tbsps white wine

Preparation steps

1.

Rinse the salmon under cold water, then pat dry. Peel the cucumber, halve lengthwise, and remove the seeds. Finely dice the cucumber.

Peel and julienne the shallot. Peel and grate the horseradish.

Heat the butter in a pan. Sauté the salmon for 1 minute per side over high heat, then remove from the pan.

Add the cucumber and shallot to the pan, and sauté for 3 minutes over medium heat. Mix in the creme fraiche, white wine, and horseradish, then season to taste with salt and pepper.

5.

Add the salmon to the pan, cover, and cook for 3 minutes over low heat to finish.
