Whole Wheat Pasta with Sweet Onion and Ricotta

4 Red onions
1 garlic clove
120 grams fresh Spinach
2 dried red chili peppers
400 grams Whole Wheat Spaghetti
salt
2 Tbsps olive oil
1 generous pinch Vanilla powder
freshly ground peppers
80 milliliters Chicken broth
grated Parmesan
4 Tbsps toasted Pine nuts
100 grams Ricotta cheese

Preparation
1.

Peel onions, trim and cut into rings. Peel garlic and finely chop.

Rinse spinach, trim, drain and spin dry. Chop chile peppers.

Cook pasta in a pot with plenty of boiling salted water until al dente.

Meanwhile, in a saucepan, sauté onion rings and garlic in olive oil and season with salt, pepper and vanilla powder. Add broth and cook onions until al dente. Add spinach and season again to taste.

Drain pasta. Add pasta to the saucepan and mix with onion-spinach sauce. Arrange pasta in preheated bowls and cover with Parmesan, chile peppers and pine nuts. Serve garnished with a little crumbled ricotta.
