4 ripe Peaches
1 Organic orange
½ lemon
175 grams sugar
500 milliliters dry white wine
1 Vanilla bean
4 scoops Vanilla ice cream
almond cookie (for garnish)

Preparation steps

Put the raspberries in a high mixing bowl. Puree with a hand blender (or puree in a blender). Strain the puree through a fine sieve. Sweeten to taste with powdered sugar and orange juice.

Rinse and peel the peaches. Cut the orange and the lemon into thin slices. Then place the peaches in a wide saucepan, add the sugar and the wine. Cut a vanilla pod lengthwise, scrape out the seeds and place in the pot along with the citrus slices and the peaches. Cover and bring everything to a boil, then simmer on very low heat for about 10 minutes. Remove from heat and remove the peaches with a slotted spoon from the sauce, then drain.

Serve the peaches with raspberry sauce and a scoop of vanilla ice cream in bowls and garnish with an almond biscuit. Pour the rest of the raspberry sauce in a sauce boat.
