White Chocolate Pudding
Soak the gelatin in cold water.
Beat the egg yolks and sugar over a hot water bath until frothy. Melt the chocolate with the vanilla seeds in the milk. Slowly beat the milk chocolate into the egg yolk mixture. Add the gelatin and stir until creamy. Remove from the heat and beat over a cold water bath until cold. When the cream begins to solidify, whip the heavy cream and fold into the cream. Pour into glasses. Chill for at least 2 hours.
Serve garnished with chocolate shavings and mint.
