Preparation steps

Simmer 75 grams (approximately 1/3 cup) sugar with 75 ml (approximately 1/3 cup) of water for about 10 minutes, stirring occasionally. Set aside and allow to cool. Then stir with the egg yolks in a metal bowl until thickened and creamy over a simmering water bath. Chop couverture and melt into the egg mixture. Stir until cold over an ice water bath. Whip heavy cream until stiff and fold into the chocolate mixture. Pour into ramekins and refrigerate at least 4 hours.

For the sauce, combine the remaining sugar with the red wine and port wine in a saucepan and reduce to about half. Mix cornstarch with 1-2 tablespoons cold water and stir into the sauce, cooking until thickened. Allow to cool.

Unmold the ramekins onto plates and pour the sauce over panna cotta. Serve garnished with grated chocolate.
