120 grams sugar
125 milliliters Whipped cream
30 grams Vanilla sugar
250 grams Red Grape
50 milliliters white Port wine
1 tablespoon lemon juice
1 Star fruit
1 teaspoon Lemon peel

Preparation steps

Melt chocolate in a hot water bath. Beat egg whites with 100 grams (approximately 3.5 ounces) sugar and vanilla sugar until stiff. Whip into a cream. Add melted chocolate to cream mixture, fold in egg whites, place mixture in a large bowl and leave in the refrigerator to set.

Rinse, halve, and seed grapes. Melt remaining sugar in a pot, add grapes and lemon zest and cook until caramelized. Add Port wine and lemon juice and boil down briefly.

Rinse starfruit and cut into slices. To serve, place grapes on dessert plates and top with mousse (using a spoon warmed by hot water bath if necessary.) Garnish with starfruit slices.
