Ingredients

7 tablespoons softened butter
3 ounces sugar
1 large egg
3 tablespoons brown sugar
4 ounces Pastry flour
3 tablespoons Oats
1 teaspoon Baking powder
1 pinch cinnamon
2 ounces dried Cranberry
2 ounces raisins
For the filling
9 ounces Couverture white chocolate
½ cup Whipped cream

Preparation steps

Preheat the oven to 350°F on the convection setting. Line a baking sheet with parchment paper.

For the cookies: Beat the butter until creamy then mix in the sugar until smooth. Add the egg and brown sugar and beat until fluffy. Combine the flour, baking powder, and oatmeal and stir into the butter mixture. Chop the cranberries and raisins and fold into the dough. With a teaspoon, put heaps of dough on the baking sheet with sufficient distance between them and press lightly to flatten the tops. Bake in the preheated oven for 10-12 minutes until the cookies are light golden brown. Cool on the baking sheet for 5 minutes, then remove and cool completely.

For the filling: Chop the chocolate coarsely and place in a bowl. Boil the cream and pour over the chocolate, stirring until the chocolate is melted. Allow to cool and until thick and creamy. Put the filling in a pastry bag with a plain nozzle and pipe some filling on the bottom of half of the cookies and sandwich with a second cookie on top of each. Use light pressure to stick the two cookies together. Cool and serve.
