400 grams Pastry flour
2 egg yolks
200 grams softened butter
5 Tbsps Whipped cream
1 pinch salt
100 grams sugar
1 packet Baking powder
For the topping
6 eggs
750 grams Quark
100 grams Sour cream
150 grams Yogurt (low-fat)
1 lemon (zest)
2 packets vanilla pudding mix
75 grams sugar
200 grams Blueberries

Preparation steps

1.

For the base, put all ingredients in a bowl and knead with dough hook of a hand mixer or knead by hand. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Preheat oven to 200°C (approximately 400°F).

For the topping, separate the eggs and stir yolks with quark, sour cream, yogurt, lemon zest and vanilla pudding powder until smooth. Whip egg whites with sugar until very stiff and fold into quark mixture. Fold in blueberries.

Roll out 2/3 of dough into a similar shape as springform pan. Grease pan and press dough into bottom and up sides to create the base. Pour in quark mixture. Crumble remaining dough and crumble on top of quark mixture.

5.

Bake in oven for 35-40 minutes.

Remove from oven and cool. Dust with powdered sugar. Cut into pieces and serve.
