1 Vanilla bean
1 cup milk
½ cup ground Hazelnuts
2 egg yolks
¼ cup sugar
cup semi-sweet chocolate (70% cocoa, finely grated)
cup Rum
cup cream (30% fat)
For the Chocolate Sauce
cup cream (30% fat)
1 tablespoon honey
1 cup semi-sweet chocolate (70% cocoa, finely chopped)
To Garnish
shaved Chocolate curl (70% cocoa)

Preparation steps

1.
Slit the vanilla bean open lengthways and scrape out the seeds. Place both in a pan with the milk and bring to a boil. Pour through a sieve.
2.
Toast the hazelnuts in a dry skillet and add to the milk.
3.
Beat the egg yolks with the sugar over simmering water. Add the milk stirring constantly until creamy (do not allow to boil). Remove from the heat and continue beating until cold.
4.
Stir in the grated chocolate and rum.
5.
Whip the cream until stiff and fold into the mixture.
6.
Spoon the mixture into timbale moulds and freeze for at least 4 hours.
7.
To make the chocolate sauce, heat the cream with the honey and bring briefly to a boil. Stir into the chopped chocolate little by little.
8.
To serve, plunge the moulds briefly into hot water, invert on plates and garnish with the chocolate sauce and shaved chocolate curls.
