120 grams sugar

Preparation steps

1.

Place the cookies in a freezer bag and crumble with a rolling pin. Mix these crumbles with the melted butter. Line a baking tray (20 x 30 cm, approximately 8 x 12 inches) with parchment paper. Distribute the cookie mass evenly onto the tray and press firmly. Refrigerate.

Soften the gelatine in cold water. Chop the chocolate and melt over hot, not boiling water. Let cool slightly.

Mix the cream cheese with the sugar and the chocolate. Dissolve the dripping wet gelatin in a warm pot and stir in 2 tablespoons of the cream cheese, then mix with the rest of the cream cheese.

Whip the cream until stiff and fold into the cream cheese mixture. Pour this onto the pie crust in the baking tray, flatten and refrigerate for 3 hours.

5.

To garnish, melt the chocolate in a water bath, spread thinly with a pallet on a marble slab and push together the still soft chocolate using a spatula to roll. Serve cut into pieces, sprinkled with the chocolate curls and cocoa powder.
