1 shallot
10 grams butter
1 teaspoon white balsamic vinegar
1 teaspoon Fish sauce
100 milliliters white wine
¼ liter fish stock
150 grams chilled butter (cut into pieces)

Preparation steps

1.

Peel and finely dice the shallots. Sauté the shallots in a little butter, then deglaze with the white wine. Mix in the fish sauce, vinegar, and the fish stock. Simmer until reduced by 3/4, then pass through a fine strainer. Add the chilled butter to the liquid, and whisk until thoroughly combined.

Transfer the sauce to glasses and serve.
