Preparation steps

Soak beans overnight in plenty of cold water. The next day, boil in a covered pot for about 45 minutes. Peel shallots and garlic and finely chop. Rinse, trim and cut scallions into rings. Sauté shallots, garlic and scallions in 2 tablespoons oil.

Drain beans and let cool slightly. Purée with 1 to 2 tablespoons oil. Add onion mixture and season with salt and pepper.

Preheat oven to 200°C (approximately 400°F). Bake baguette slices for about 5 minutes until crispy on both sides. Remove from oven and drizzle with remaining oil. Spread baguette slices with bean paste and serve.
