White and Dark Chocolate Mousse
Chop the white and dark chocolate finely. Transfer to separate bowls and melt over simmering water. In a saucepan, beat egg yolks with sugar until foamy and stir in the milk. Bring to a boil. Divide the mixture between two bowls. Add the melted white chocolate to one bowl and the melted dark chocolate to the other.
Beat the egg whites to stiff peaks. Fold half into the white chocolate mousse and half into the dark chocolate mousse. Cover the bowls and refrigerate the mousse until cool. To serve, whip the heavy cream and fold half into each mousse and spoon into dessert bowls.
