For the cake
4 eggs
180 grams sugar
100 grams Pastry flour
100 grams ground Walnut
½ packet Baking powder
For the filling
500 milliliters Whipped cream
1 packet whipped cream stabilizer
2 tablespoons Vanilla sugar
4 tablespoons cocoa powder
3 tablespoons Whiskey
100 grams toasted Almond slivers
Chocolate shaving (or chocolate rolls)

Preparation steps


For the cake: Preheat the oven to 180°C (approximately 350°F). Separate the egg. Beat the egg white until stiff, and gradually sprinkle in the sugar. Whisk in the yolk. Combine the flour, almonds and the baking powder and fold into the egg mixture. Line the bottom of the springform pan with parchment paper, grease the sides and sprinkle with flour. Spoon the batter into the pan and bake in preheated oven for 30-35 minutes (until inserted toothpick comes out clean). Allow to cool and cut into thirds horizontally.


For the filling: Whip the cream until soft peaks form, then gradually add vanilla sugar. Set 5 tablespoons aside for decorating. Stir the cocoa with the whiskey into the cream.

Spread filling on one layer of cake.  Top with another layer and repeat with more filling.  On the top layer, spread the cream smoothly on the top and sides and decorate with dollops of vanilla cream. Press toasted almonds around the side of cake. Garnish with chocolate shavings or chocolate rolls. Refrigerate the cake until well chilled and serve.
