Watermelon Granita

- 24 ozs Watermelon
- 7 ozs Raspberries
- 5 ozs red Currants (or frozen cranberries)
- 1 ½ ozs sugar
- ½ lemon (juiced)
Peel watermelon and remove seeds if necessary. Rinse raspberries and red currants. Puree approximately 16 ounces watermelon in a blender along with approximately 3 ounces raspberries, sugar, and lemon juice.
Freeze watermelon puree for about 3 hours stirring mixture with a fork every 20 minutes during the first hour. Cut remaining watermelon into cubes.
Remove watermelon granita from the freezer about 15 minutes before serving. Scrape granita with a spoon into chilled glasses. Skewer remaining raspberries with diced watermelon. Serve with fruit skewers on the glasses and garnished with red currants.
