For the cookies: Combine all of the ingredients for the cookies and quickly knead to a smooth dough. Gather the dough into a ball, wrap in foil, and refrigerate for 30 minutes.
Spread the dough into an even layer on a buttered baking sheet and brush with apricot jam.
For the coating: Heat the sugar with 2 tablespoons water in a small pan and caramelize. Stir in the walnuts and butter. Add the cream and continue to caramelize until golden brown.
Spread the walnut mixture over the rolled dough and bake in an oven preheated to 180°C (approximately 350°F) for approximately 15 minutes.
Remove from the oven, let cool, and cut into triangles.
