1 Measuring cups, 1 Small pot, 1 Wooden spoon, 1 Mini food processor (optional), 1 Cutting board, 1 Small knife, 1 Kitchen scale, 1 Tablespoon, 1 large Mixing bowl, 1 Hand mixer, 1 Kitchen towel, 1 Parchment paper, 1 Baking sheet, 1 Wire rack, 1 Fine grater, 1 Citrus juicer, 1 Small bowl, 1 Pastry brush, 1 Large knife (or bread knife)

Preparation steps

Heat the milk until lukewarm in a small pot. Crumble yeast into milk and stir to dissolve.

Coarsely chop walnuts in a mini chopper or with a large knife. Cut mango pieces into thin strips and finely dice apricots.

Combine both flours, sugar, vanilla sugar, butter, oil, egg, quark and a pinch of salt in a large bowl. Pour in yeast-milk mixture and knead with dough hook of a hand mixer until smooth.

Add walnuts and dried fruit to the dough and knead again briefly. Cover with a kitchen towel and let rise in a warm place until doubled in bulk, about 1 hour.

Place the dough on a floured work surface and knead with your hands. Pat into an oval shape (about 25 x 20 cm) (approximately 8 x 10 inches). Roll up dough starting from a long side into a log.

Line a baking sheet with parchment paper. Place the dough on the sheet and bake on the middle rack of preheated oven at 175°C (fan 160°C, gas: mark 2) (approximately 350°F) until golden brown, about 40 minutes. Remove from oven and allow to cool completely on a wire rack.

Rinse orange with hot water and wipe dry. Finely grate the zest. Squeeze juice from orange.

Combine 1-2 tablespoons of orange juice with orange zest and powdered sugar in a small bowl and stir well. Drizzle the cooled stollen with the icing. Let the icing dry and cut the stollen into slices to serve.
