Walnut Pear Cake
Pears pack with cake with the mineral potassium, which plants an important role in muscle and nerve function.
This cake also tastes really great with apples instead of pears.

Peel the pears, quarter, remove the cores and cut 1 pear into thin columns. Cut the remaining pears into small cubes. Drizzle all of the pears with lemon juice.
Preheat the oven to 350°F. Grease the cake pan with butter and sprinkle with flour.
Beat the butter and sugar until creamy. Gradually stir in the eggs. Mix the flour, nuts, baking powder, cardamom and cinnamon. Alternately stir the flour mixture and the milk into the butter mixture. Fold in the pear cubes and the raisins. Pour the batter into the pan. Press the pear slices decoratively into the batter. Bake for about 1 hour and 15 minutes, until a toothpick inserted into the center comes out clean. To prevent excess browning, cover with aluminum foil.
Remove from the oven and brush with the honey. Let cool on a wire rack. Cut into pieces and serve.
