Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F). Butter a 6-cavity muffin tin and dust with flour. 

2.

Coarsely chop the walnuts and mix with the flours, baking powder and baking soda. 

3.

In a large bowl, whisk together the eggs, sugar, honey, oil and buttermilk. Stir into the flour mixture and mix until well combined. 

4.

Pour into the prepared muffin tin and bake for 30 minutes. Remove from the oven and sprinkle with sugar while still hot. Remove the muffin from the tin and cool on a wire rack.
