Wafer Pockets with Berries
- For the wafers
- 50 grams Marzipan
- 180 grams sugar
- 3 eggs
- 50 milliliters Whipped cream
- 150 grams Pastry flour
- 1 Vanilla bean (slit down the center)

Mix the marzipan, sugar, vanilla, eggs and milk. Gradually stir in the flour and pour the batter through a fine sieve. Set aside for 1 hour. Grease the baking tray and sprinkle with flour. Lay a template with a circular hole about 8 cm (approximately 3 inches) in diameter on the greased and floured baking tray and spread the dough thinly and very evenly in the circular shape on the pan. Remove the template and use remaining batter to make the rest of the circles. Place in a preheated oven to bake at 190°C (approximately 350°F) for about 6 minutes. Immediately remove the circles from the sheet. While still warm, roll the wafer sheets into pockets and hold. After approximately one minute release and let it cool. Repeat this procedure until you have 8 pockets.
Whip the cream with the vanilla milk powder, pour into the pockets and garnish with berries. To serve, rest the filled pockets in decorative glasses.
