Wafer Cups with Ricotta Cream
- For the wafer cups
- 30 grams Marzipan
- 100 grams sugar
- 2 eggs
- 40 milliliters Whipped cream
- 100 grams Pastry flour
- 1 packet Vanilla sugar

- Pastry flour (for the baking sheet)
- powdered sugar (for dusting)
For the wafer cups, stir together the marzipan, sugar, vanilla sugar, eggs, and milk. Mix the flour and gradually into the mixture. Pour the batter through a fine sieve and let sit for 1 hour. Grease the baking tray and sprinkle with flour. Make a template out of cardboard with a hole about 10 cm (approximately 4 inches) in diameter in the center. Place the template on the baking tray and spread the dough thinly and very evenly through the template onto the tray. Remove the template and continue to make a total of 6 circles with the batter, in this manner. Bake in a preheated oven at 190°C (approximately 350°F) for about 6 minutes, watching carefully. As soon as the circles are light brown, remove from the oven and remove the wafers from the baking sheet immediately. Let cool slightly and while still warm, form the wafers into 6 small cup shapes.
From the rest of the batter, make decorative shapes using templates such as leaves, trees, etc. Sprinkle the shapes with powdered sugar and leave to cool on a wire rack.
Mix the ricotta with cream, vanilla, and orange sugar, the sugar, orange liqueur, and brandy.
Distribute the cream into the wafer cups. Garnish with cherries and the decorative wafer shapes and serve immediately.
