- 200 grams button Mushroom
- 200 grams Chanterelle
- 1 onion
- 600 grams Venison goulash
- 1 Tbsp clarified butter
- 100 milliliters dry white wine
- 300 milliliters Game stock
- 2 sprigs rosemary
- 1 fresh bay leaf
- 100 grams Crème fraiche (or crème légère)
Preparation steps

Trim the mushrooms and leave whole depending on the size or cut into pieces. Peel the onion and finely chop. Cut the venison cubes into smaller pieces if desired. Sauté the onions in hot butter until translucent. Add the stew meat and sauté. Sauté the mushrooms briefly, then deglaze with the white win. Add the herbs, season with salt and pepper, cover and simmer about 30 minutes. Stir in additional stock, if necessary.

Remove from the heat and stir in the crème fraîche.

Serve with potatoes if desired.
