10 ounces white potatoes

3 ½ ounces Sour cream

Preparation steps

Preheat the oven to 350°F.

Rinse the eggplant and potatoes and pierce both several times with a fork on all sides. Spread on a baking sheet lined with foil and bake for about 45 minutes or until soft.

Rinse the tomatoes, remove the stalk and cut into slices. Drain the feta and also cut into slices. Rinse the lettuce, spin dry and pluck into small pieces. Rinse the chile, remove seeds, finely chop and stir in the sour cream. Season with salt and pepper.

Remove the eggplant and potatoes from the oven, let cool slightly and remove the skin of the eggplant. Puree the eggplant. Peel the potato and mash finely with a fork. Mix with the eggplant. Add the parsley and the pressed garlic. Add enough breadcrumbs that the mixture becomes moldable. Season well with salt and pepper. Using wet hands, form 4 patties and cover the patties with breadcrumbs on both sides. Place in a pan in hot oil and saute each side for 3-4 minutes until golden brown.

Cut the bread rolls in half and place 1-2 tablespoon sour cream on it. Then place a lettuce leaf, and place a veggie burger patty on it. Top with tomatoes, feta and lettuce and place the top of the bread roll on the burger.
