Vegetables with Spelt Berries and Herbed Quark Dressing
In a pot, bring spelt berries and broth to a boil and simmer 10 minutes. Place pot over very low heat, cover and cook 30 minutes. Simmer carrots in salted water, 12-15 minutes.
Rinse, trim and cut scallions into 1-2 cm (approximately 1/2 to 3/4-inch) pieces. Mix quark with milk and chopped herbs. Season with salt and pepper.
Melt butter and toss with prepared vegetables to coat. Serve spelt berries with vegetables and quark dressing.
