Celery has an antibacterial effect, i.e. essential oils such as apiin can demonstrably slow down bacteria, viruses and fungi and thus provide us with ideal natural protection during the cold season. In addition, bitter substances from vegetables stimulate our digestion by activating digestive juices and enzymes.
With the classic vegetable soup you can change the vegetables according to the season. Fennel or broccoli, for example, also fit into the vegetarian dish. If you want to add some egg white to the soup, you can break one or two eggs with a garlic and add them to the vegetable soup.
Peel and rinse the potatoes, carrots and kohlrabi. Dice the potatoes, grate the carrots and cut the kohlrabi into thin sticks. Rinse the cauliflower and divide into florets. Rinse the peas. Rinse the celery and cut into thin sticks.
Bring the broth to a boil in a large pot. Add the vegetables. Simmer over medium heat for 10-15 minutes. Season with salt and pepper. Stir in the parsley and lovage. Serve immediately.
